Cooking Method
Beat egg yolks until think, add boiling water, stirring continuously.

Cook in double boiler until thick and smooth.

Add butter just
before removing from heat.

Pour into baked pie shell and bake in
325 oven till pie is light brown.

Remove from oven, cover with
meringue and bake until both crust and meringue are brown.
Meringue for Vinegar Pie:

Beat three egg whites until stiff.

Add three Tablespoons sugar,
one at a time, and one teaspoon lemon extract.
