Sticky Rice
Thom Hackett Servings: 4
Ingredients
14 ounces rice (glutinous type) 3 cups water
6 teaspoon salt
Cooking Method
Soak the rice in the water overnight.
Rinse the soaked rice thoroughly.
Mix the salt with the rice.
Dampen a piece of cheesecloth and place the cheesecloth in your steamer and spread the rice over the cheesecloth.
You will steam the rice for 40-45 minutes.
Check it occasionally as it steams and drizzle or sprinkle water over it.
As you check it you may want to taste it to be sure it is cooking to the consistency you like.
Most Asians including the Vietnamese want it soft.
