Cooking Method
Preheat the oven to 350 degrees F.
Cream sugar with butter until light and fluffy.
1. Beat in egg yolks.
2. Add grated lemon rind and juice.
3. Beat all together.
Beat egg whites in a separate bowl (with clean beaters)
until stiff.
Fold the egg whites into the mixture.
Pour into the pie shell.
Bake until set and light about 25 to 30 minutes.
