Lemon Chess Pie

Base Recipe from Christy Jordan at Southern Plate

I always loved my "Lemon Chess Pie".  I looked at Christy Jordan's recipe and thought it would be good as well.  I shouldn't have done that because I like hers better than mine.  Therefore, I thought I would share it with you and let you be the judge.

 

Ingredients


1 cup of sugar
4 tablespoons butter
2 lemons, grated rind and then juice from each
4 eggs, separated
1 pie crust, baked

Cooking Method


Preheat the oven to 350 degrees F.

 

Cream sugar with butter until light and fluffy.

     1.  Beat in egg yolks. 

     2.  Add grated lemon rind and juice.

     3.  Beat all together.

 

Beat egg whites in a separate bowl (with clean beaters) until stiff.

 

Fold the egg whites into the mixture.

 

Pour into the pie shell.

 

Bake until set and light about 25 to 30 minutes.
