Fried Oysters

Fried Oysters

The entire family likes these fried oysters.  Living in Virginia gives us the opportunity to have them whenever we wish.  However, It is a family tradition dating to our parents time that we have fried oysters every Christmas morning.  We also enjoy them at other times of the year as well.

 

Ingredients


½ cup evaporated milk

1 cup flour

1 teaspoon salt

1 teaspoon paprika

2 eggs

2 tablespoons water

Panko bread crumbs (can use crushed saltines; use food processor)

extra virgin olive oil

fresh lemons

Cooking Method


Pour the extra virgin olive oil into a skillet to about ½-inch deep and heat the oil to 350° F.

 

Place the shucked oysters in a bowl and cover them with the milk. 

  1. In a second bowl combine the flour, salt and paprika.

  2. In a third bowl whisk the eggs and water.

  3. In a fourth bowl place the bread crumbs.

  4. Dip the oysters one-at-time in the flour, then the egg mixture, then the bread crumbs and place in the oil. 

  5. Fry until the oysters are brown about 2 minutes.

Place the cooked oysters on a paper towel or brown paper bag to drain.

 

Serve hot with lemons.
