Chicken with Oregano and Mushrooms

Serves:  2

Chicken

 

All ingredients are all-natural or organic.

Ingredients


½ Chicken

2 tablespoons Extra Virgin Olive Oil

¼ cup onions, chopped

½ teaspoon Celtic sea salt

teaspoon pepper

teaspoon dried oregano

½ clove garlic, minced

1 tomato, peeled and quartered

¼ cup dry white wine

4 ounces fresh mushrooms, sliced

2 tablespoons parsley, chopped for garnish

 

Cooking Method


Brown the chicken pieces slowly in hot olive oil.

  1. Add onions, and cook until soft.

  2. Drain the oil, and season chicken with salt and pepper.

  3. Add oregano, garlic, wine, and mushrooms.

  4. Scrape the bottom of the pan to loosen browned bits.

Cover and cook over low heat until the chicken is tender, about 35 minutes.

  1. Add tomatoes.

  2. Continue cooking for 5 more minutes.

Garnish with parsley.
